{august vegetable soup}

Finally everything is together now! I’ve been working really hard on my organic garden and now can honestly say it was well worth it. I just harvested my vegetables and cooked a delicious soup today. For this dish I only needed to buy a nice piece of sausage at the market along with of course,  a good bottle of dry white wine as this is my newest tradition and I think it goes well with this meal. It’s already August, the last month of summer which means fresh beans, zucchini and potato. Also, back to school items are now on sale, ’SZIGET’ festival just kicked off in Budapest and according to folk wisdom after August 10th the watermelon start to become less tasty. Oh well, time is really flying quick. But I would like to console you with this delicous August vegetable soup.Takes just a little effort to make it. Enjoy!


1 big red onion, chopped

1 zucchini, julienned

3 carrots, sliced

2 parsnips, sliced

1 small celery root, cubed

1lbs fresh beans

3 tomatoes, cubed

3 potatoes, cubed

1 green paprika, sliced

1 bunch parsley

fresh basil & fresh oregano

1-2 bayleaf

2 garlic cloves

2oz dry white wine

salt, pepper

1 piece of sausage (could be spicy)


Slice the sausage and saute it in a pan. Take them out and add onion, garlic saute them for at least 4-5 minutes. If it needs more oil add it at this time. Add all other vegetables, saute them for about 2-3 minutes more, then add wine. Let it cook covered for about 30 minutes then add 16oz water to it. Add all the seasoning and let is simmer for about 2 hours. Plate it with the sausage on top and serve it with fresh home made bread.
